Even More Exciting News: The Bulk Beef Program Just Got Even Better!!!

Updated: Jan 4

Wow my friend,

What a Merry Christmas we have had here. The joy of the season still has us buzzing along with all of the snow we have gotten so far!

'Hector the Protector' our Senior Livestock Guardian Dog LOVES the snow!

I hope you feel the same way.

Right now we have over 2 feet and it's still coming down!

Chris and I call this "Stuck Season" but it sure beats "Fire Season" so you won't hear us complaining.

It is time to get good at chaining up the pickups again though!

We hope you are staying as warm and dry as possible.

I have a very cozy recipe for you. This is one of my winter-time favorites and it is also the favorite of one of our Beef Ranchers- Ed Sigel.

You may remember him if you clicked on the video in my last post.

His all-time-favorite thing to make with Ground Beef, is Pasties.

If you have never heard of Pasties before, they are pretty similar to cabbage burgers, and they are SO good!

A perfect comfort food for Winter time.

I love to make up a HUGE batch of these and freeze them at the beginning of winter so I can just pull them out of the freezer and bake them whenever we get a craving for them.

Nothing beats a pastured-pork-lard crust stuffed with your favorite comfort food veggies and ground beef.

This recipe is also in the cookbook I wrote. I hope you thoroughly enjoy it and I hope it helps warm you up after a chilly snowy day!

If you know me and the crew at Taste of the Wind, you know that we are all-about everything Farm-To-Table.

Wendell Berry said, "Eating is an agricultural act. Eating ends the annual drama of the food economy that begins with planting and birth."

This really sums up how we think about food: it's more than just a packaged item you pick up at the grocery store. It is a beautifully-complex web that we are all connected through. This web begins with Your Ranchers and the Animals they work with, and is Completed by YOU!

This is why we focus on the relationship of our food, rather than just the food product itself.

So... to come full-circle and connect you to your food even stronger my team of ranchers and I really want to get you out to the ranch to "Meat" your ranchers and the animals that nourish us!
